Ingredients
2 20 oz cans of young, green jackfruit (in brine or water)
1 small white onion, sliced thin
1 cup of your favorite BBQ sauce
½ cup water
Directions
Remove jackfruit from the cans, drain and rinse.
Some canned jackfruit contains the tougher pieces of core. To maintain a consistent texture throughout the finished dish, cut the core and remove.
Heat the olive oil in a large pan. Add sliced onion and cook over medium heat until translucent.
Add jackfruit, BBQ sauce, and water to the pan.
Stir well. Then cover the pan and simmer for 20 minutes over a low heat, stirring occasionally.
After 20 minutes pull the jackfruit apart with 2 forks or mash with a potato masher to desired shredded texture.
Season with salt, pepper, and any additional seasonings as desired.
Cook for an additional 10 minutes with the cover off and stirring frequently. You want the the jackfruit to get a bit dry and even have some char in places.
This delicious Meat-Lovers Barbecue Jackfruit can be enjoyed in any way you would pulled pork.
Pro Tip: In a rush? After cooking the onions in a pan on the stove, add them and all the remaining ingredients to your slow-cooker and cook on low for 4 ½ – 5 hours, shred, and enjoy!
