There is simply nothing more enjoyable than brunch, particularly when you’re serving – or being served – Healthy Salmon Frittata. This dish checks every box for a tasty, leisurely meal – any time of year. Easily increase the recipe to serve at parties!

  • Prep Time: 10 Minutes
  • Cook Time: 20 Minutes
Ingredients
  • 1 tablespoon coconut oil
  • 1 red onion, chopped
  • 1 green pepper, chopped
  • 2 garlic cloves, minced
  • 1 ½ cups cherry tomatoes
  • 1/2 teaspoon paprika
  • 1 teaspoon cumin
  • 1/2 cup wild-caught salmon, diced
  • 6 free-range eggs beaten
  • Pinch of sea salt
  • Pinch of pepper
  • 2 tablespoons chopped cilantro
Directions
  1. Preheat oven to 350°F.
  2. Melt coconut oil in an oven-safe skillet and sauté red onion and green pepper; stir in garlic and cook for about 2 minutes or until fragrant.
  3. Stir in paprika, cumin, salt, and pepper and cook for about 1 minute; stir in tomatoes and cook until soft.
  4. Sprinkle with salmon and cover with eggs; season with salt and pepper and bake for about 15 minutes or until eggs are set.
  5. Serve Healthy Salmon Frittata warm garnished with cilantro.
