Yes, these are brownies, but no, there is absolutely no guilt involved. In fact, these high fiber Breakfast Brownies are actually very good for you. They will nourish your body, make you think twice about hitting the snooze alarm, and be a bit of morning sun on even the cloudiest day. And did we mention that they’re chocolate?

If you have little ones at home, this is a very simple recipe that’s fun and easy to make, and better to eat. However, no kids are required!

Make these even better by purchasing organic ingredients.

Yield: 9 Servings

Total Time: 35 Minutes

Prep Time: 10 Minutes

Cook Time: 25 Minutes

Ingredients

1 14 oz can cooked black beans
1/2 cup chopped Medjool dates
2 eggs
1/2 cup no sugar added applesauce
2 tsp pure vanilla extract
1/2 cup cocoa powder
1/2 tsp baking soda
1/2 tsp salt

Instructions

Preheat your oven to 350F.

Take a 9×9 inch square pan and line with parchment paper or grease.

Put all the ingredients into the bowl of a food processor and pulse until blended.

Scrape batter into the pan and smooth out the top.

Bake at 350 degrees for 20 – 25 minutes until a toothpick inserted comes out with crumbs but not wet batter.

Breakfast never tasted so good, and gooey chocolate was never so guilt free. These Breakfast brownies will be a hit with…everyone!
