Healthy Chicken Bowl

Americans eat more chicken than just about any other country in the world. So it’s not a surprise that we’re also always on the lookout for tasty and healthy new recipes when it comes to this versatile bird. Here’s a recipe for a Healthy Chicken Bowl that you won’t get tired of anytime soon.

Ingredients

For the Chicken

  • 4 (@ 5 oz) boneless skinless chicken breasts
  • 1 tablespoon extra-virgin olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper

For the Salad

  • 1 cup shredded red cabbage
  • 2 cups chopped lettuce
  • 1 cup sliced scallions
  • 1 cup halved cherry tomatoes
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon raw honey
  • 2 tablespoons apple cider vinegar
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper

Directions

Preheat the oven to 425 degrees.

Mix fresh lime juice, red pepper flakes, ground cumin, paprika, cinnamon, sea salt, and black pepper in a small bowl. Rub the mixture onto the chicken breasts.

Heat extra virgin olive oil in a skillet and sear in the chicken breasts for about 5 minutes per side or until golden browned.

Transfer to a baking dish and roast in the oven for 10 minutes. Remove from oven and slice.

Mix cherry tomatoes, red cabbage, cucumbers, and lettuce; drizzle with apple cider vinegar, raw honey, and olive oil—season with sea salt and pepper.

Divide the salad among serving bowls and top each with roasted chicken. Enjoy!
